This past weekend was worth celebrating as my husband graduated with his Doctorate degree in Optical Engineering. It’s something that I know he’s worked hard to accomplish and it definitely warranted a stellar dessert. He’s partial to Strawberry Shortcake so when I saw this recipe, I knew it was perfect for our celebratory occasion. Now that this particular chapter is closing, we can’t wait to discover a few new ones…I hope to divulge to you guys in the coming months! Happy Monday! xx
Hi there! It’s been a while since I’ve posted on the blog and while my absence was a much needed break, I have found a renewed breath of air as my life is finally returning back to normal from a world-wind of decision-making, training and transitioning. You might have also noticed the blog has a new name, “Confection” meaning an elaborately constructed thing. How appropriate for my labor of love. It might take some time for me to tweak everything on the site to reflect this change, so thank you in advance for your patience! Things have been hectic. Actually, that is the understatement of the year, things have been overwhelmingly busy in every aspect of my life lately. Work has been busier than usual with a few organizational changes and training for the Racefest half marathon is coming to a close, which means my long runs have turned into quite the grueling and painful exercise regimen. Somewhere between work, training and play, I found the time to blog about this brown rice salad. I originally picked up a version of the recipe here, but substituted chicken for apples and added a dollop of low-fat yogurt as a sort of dressing instead of using balsamic. With spring officially here it’s time to roll up the sleeves and get working on our outside patio. I plan on making into an evening oasis this year, since last year we were too busy with wedding planning to properly execute any of the creative ideas I had. While we live in a townhouse there won’t be too much of an investment but to me it’s got DIY project written all over it. While gazing at other small, outdoor places it has me inspired to take advantage of this weekend. Hopefully with the help of Craigslist, some paint and a few perennial flowers, we’ll add some square footage to host dinners in our home.
